Overview

Water activity analyzers are devices used to measure the amount of free moisture in a material, typically in food products, pharmaceuticals, and other substances. Water activity is different from moisture content; it refers to the availability of water for microbial growth and chemical reactions. These analyzers work by determining the equilibrium relative humidity of a sample.

In practice, a sample is placed in a sealed chamber within the analyzer. The device then measures the humidity levels as they stabilize and calculates the water activity based on these measurements. This information is crucial for quality control, shelf life prediction, and ensuring product safety and stability.
